This coffee is carefully harvested at peak ripeness, floated, and hand-sorted to remove defects before undergoing 30 hours of underwater fermentation. After pulping, the parchment is gently washed and dried under temperature-controlled conditions to achieve optimal moisture content. Managed with precision by Luz Helena, her washed lots reflect her dedication to quality. This microlot consists of 100% Castillo, a variety developed by Federación Nacional de Cafeteros for its high productivity and resistance to coffee leaf rust.
