Malawo is a washed Ethiopian Grade 1 coffee produced by Daye Bensa and grown by smallholder farmers in the high-altitude Arbegona region of Sidama at elevations reaching 2,200 metres. The exceptional highland microclimate allows the 74158 variety cherries to mature slowly, producing dense, complex, and flavour-rich beans. After hand-harvesting ripe cherries, farmers sort them by density in large water flotation tanks before transferring them to African raised beds, where they are turned every 30 minutes to manage drying and fermentation over 12 to 15 days. The beans are subsequently rested in local warehouses to further develop their flavour profile prior to final milling and export.
