Bukit Paniisan Anaerobic Honey is a standout coffee produced by 200 smallholder farmers in the Rancabali subdistrict of Bandung, West Java. These farmers cultivate Ateng Ijo and Ateng Coklat varieties on small plots averaging 0.5 to 1 hectare, situated at elevations between 1,400 and 1,700 meters above sea level. The coffee cherries are processed at the Sadayana Washing Station, established in 2022 by PT Sucafina in collaboration with local partners. This facility not only enhances processing capabilities but also supports farmers through compost and seedling programs, as well as microfinancing initiatives. The anaerobic honey process involves fermenting the cherries in sealed barrels with one-way valves for 120 hours, followed by drying on raised beds and patios. This meticulous method results in a complex and high-quality coffee, reflecting both the dedication of the farmers and the innovative processing techniques employed.
