This exceptional coffee was cultivated by Jairo Arcila at the Santa Mónica farm, located in Armenia, Quindío, Colombia. Grown at an altitude of 1450–1500 meters above sea level in volcanic ash-rich soil, this micro-lot is composed entirely of the Pink Bourbon varietal—a unique cultivar believed to have originated as a mutation in San Adolfo, Huila. The beans underwent a 72-hour dry anaerobic fermentation with the pulp on, during which smashed rose petals were added, infusing the coffee with floral complexity. After fermentation, the cherries were pulped and dried on raised beds to achieve optimal moisture content. The resulting cup offers exquisite notes of rose petals, sweet red apple, apricot, and sugar cane, earning it a remarkable cupping score of 90.
